Instant bruschetta

Fancy a quick and healthy snack? Or some Italian food but think it’s all too complicated? Try this simple bruschetta recipe. It’s a super tasty starter for everyone in your student house!

All you need:

  • One slice seeded bread (or your favourite bread)
  • 10 cherry tomatoes (save the rest for tomorrow)
  • Salt & Pepper
  • Olive oil
  • Chopped herbs eg: basil, sage, mint (can use dried too)

Get cracking:

Quarter several cherry tomatoes and mix in a small bowl with salt and pepper. Add a glug of olive oil and any chopped herbs (if dried leave to soak in for 5 mins). Pile on the slice of bread and tuck in.
